Cranberry bellinis
Serves 6
200g cranberries
50g caster sugar
150ml fresh orange or clementine juice
1 bottle of chilled Champagne or prosecco

1.Place the cranberries, sugar and orange or clementine juice in a small saucepan and bring to the boil.
2.Cover the pan and simmer over a low heat for 5 minutes until soft, then press through a fine-mesh sieve and leave to cool. You should have about 200ml of thin pure. Cover and chill.
3.Give the pure a stir, then spoon a rounded tablespoon into each glass, fill up with 100ml of fizz and give it a quick twizzle to blend.
